It's that time of the month when my favorite magazine and the movie "When Comes The Heart,"  is out. This evening I will relax with both! Relax!!!

Spaghetti Squash

I Love carbs. I have always favored pastas and breads. Since I have cut back on all sugars and carbs I have been seeking new ways to eat more healthy. I replaced pasta with spaghetti Squash. Here is the recipe: My husband and I loved it.

  1. Heat the oven to 400°F and arrange a rack in the middle. Cut the squash in half lengthwise and scrape out the seeds. Brush the flesh with 2 tablespoons of the oil and season generously with salt and pepper. Place the squash halves cut-side up on a baking sheet and roast until fork tender, about 50 minutes. Remove the squash from the oven and let sit at room temperature until cool enough to handle, about 30 minutes. Scrape the flesh with a fork to make long strands; set aside. Use this as you would any drained pasta by covering with sauces.

Getting Out

Thursday Night Anthony and I got out for the AG District dinner. It was a good evening. I love it when our schedules are able to make time for friends and fellowship.
Downtown Springfield is a great little spot to host dinners at the 425. They gave away great gifts and prizes. One of the giveaways was a really good book. It will be a blessing to so many pastors wives. Thank you all who made this possible. Loved it!!

Flourless Pancakes

It was so easy and so delicious! We have had for breakfast this week the flourless pancakes.

I was surprised how good they really were. I used sugar free syrup.(splenda)

One Egg
One green banana
mix in a blender

Pour mixture into a  heated pan with a little coconut oil. Cook on each side for a couple of minutes.
top with your favorite goodies.(healthy of course)

Sweet Pineapples Crock Pot (sugar free) Meatballs

What's for Dinner tonight? Sweet Pineapples Crock Pot (sugar free) Meatballs that's what!
Love this recipe over brown rice.

Theme: Winter Lodge


1 1/4 cup of no sugar apple sauce

4 packets of Splenda or Stevia

  • tablespoons soy sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 1/2 lbs frozen meatballs ( I make my own by mixing sausage and hamburger)
  • red bell pepper, chopped
  • 1 (20 ounce) can pineapple chunks, drained
  • Another flavor idea is to mix sugar free grape jelly and cocktail sauce then add the meatballs
  • Directions:

      If using liner, place it in a slow cooker bowl, fitting it snugly against the bottom and sides of the bowl; pull top of liner over the bowl rim.

      Place all ingredients in the slow cooker; stir gently then cover with the lid.

      Cook on low setting for 7 to 8 hours, or on high setting for 4 to 5 hours, until done.

      Carefully remove the lid to allow steam to escape.

      Serve directly from the slow cooker over rice

I am so excited to introduce to you most of our hard working amazing team at PROMISE CHURCH.
(a few pictures of our team are missing. I will add  them later when they get back from the Holidays and sickness)( I will also add more pictures as we continue to grow)
We love these people so much!!!They are incredible people to be around. You just have to meet them. They take a regular elementary school and turn it into a fabulous church building where GREAT THINGS ARE HAPPENING.
We are four months into our new church plant in Carthage, MO. They are stars and real champions!! The Father will say Well Done My Good and Faithful Servant!! It takes nothing to go to a church where you sit and soak in where everything is already provided for you. These People work hard for God! They are so happy and joyful. It takes real people who know how to navigate their emotions and maturely stand up and  plant a new work. They are someone God can use. They are someone God can build on. They are not quitters, whiners or critical people. If they go through something they do not point fingers. They do it the right way and get help to navigate through their personal season. That is why I can say Thank You all so much for all that you do for Promise church. We have had 23 saved and baptized 6. God is Good!

They come in early on a Sunday Morning faithfully! It takes about an hour to set up then every one gets to fellowship, drink coffee and catch up. So we asked them, Why Do You Do this? Here are their answers.

John: " I like helping people and getting to do something for God helps to keep my mind at ease."

Chad:"I have a chance to be apart of something to grow for the glory of God."


                                  Spencer:"I am trusted with the equipment to get it set up for Promise Kids."

Sheri R: I have purpose, to serve God and to watch his love flowing through his people through service. Teamwork."

Charky:"I love the teamwork and the coffee."

Ethel: "Everyone's spirit in the morning. It's a good way to start the morning."
