Savory Lemon Muffins
Gluten Free/protein/ healthy
- 1 1/4 cup almond flour
- 1 cup shredded unsweetened coconut
- 2 tbs coconut flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup of raw honey
- 1/3 cup fresh lemon juice, plus the zest of 1 lemon
- 1/4 cup full-fat coconut milk
- 3 eggs, whisked
- 3 tbs coconut oil
- 1 tsp vanilla extract
350 degree for 18 min.
Mix wet ingredients first together
Then mix dry together in two separate bowls
Combine
Add to a greased muffin pan
I have to say they turned out great. I served with real butter (not sweet)
Great lemon flavor
Pair it with a great salad.
